Founded in the 1540's in the small town of Kinomoto in Shiga Prefecture, Tomita Brewery is one of the oldest and smallest breweries in Japan. Seven Spearsman pays tribute to the victorious battle of Shizugatake in Kinomoto in 1583, which boosted their leader, Hideyoshi Toyotomi, to soon secure dominance over all of Japan. Starting in the Edo period, the sake from Tomita brewery was aptly named "sake of victory" after the town's great warriors. Yasunobu Tomita, the 15th generation of the family, is committed to making sake using only local ingredients. Yamada Nishiki rice grown by contract farmers in Shiga prefecture is used in this sake. This small-batch, seasonal sake is bottled in the spring and spends a perfect six months maturing over summer. Layers of flavor gradually open up to a lively, smooth taste that pairs well with a wide range of foods. Serve chilled to warmed.
