Esoterico is the most popular wine from Australia's forward-thinking Unico Zelo, the 12 year old winery dedicated to making wines from drought-resistant varieties (i.e planting vines that suit the Clare Valley and Riverland's hot, dry climate, and don't require excessive and wasteful watering). This amber wine is vibrant, aromatic and zany blend of Zibibbo, Gewurtztraminer, Moscato Giallo, Greco. Made without additions of any kind - save for sulphur at bottling-- and sans fining or filtration (the wine is clarified by gravity alone - resulting in a slight haze and sediment), the wine beautifully captures the pure, barely ripe, delicious fruit .
