Aligoté, once considered the “second” white of Burgundy, is coming into its own these days, and Terah’s interpretation makes a strong case for this rare grape’s continued ascendance. Aligoté’s naturally high acidity - and ability to hold onto it -are a boon in regions with frequent hotter vintages. It produces wines that are both fresh, weighty and textural. With notes of spring blossoms, lemon curd, white pepper and wet stone. Pair with soft cows milk cheeses, arugula salads or fresh oysters.
