A sardinade is a French summer feast built around the humble sardine. Ours is a sardine dip  — sardines, egg, capers, herbs, Dijon mustard, and lemons that Olga has been curing in salt for two years, waiting for this exact moment.

One bowl goes spicy with pickled jalapeño. One goes smoky with pimentón. Four wines to pick as their sides.
