Meet Galicia’s native white grape, Godello, grown on steep, terraced slopes overlooking the Sil River. Some call it Spain’s White Burgundy for its incredible ability to translate site, its versatility in the cellar (ie. there are excellent examples made oxidatively in oak, as well as examples like this one made entirely in steel) and its potential for making finessed, age-worthy whites that balance fruitiness and flintiness. We think of Godello simply as seafood’s best friend. Pour a glass alongside scallops, branzino or pulpo a la plancha.
