Friday Night Tasting: Carboniste's Dan Person Presents Bubbles Four Way | May 29th, 2026 | 5-7:30pm
"Champagne is from France; CARBONISTE is California", a bold, but apt motto for Dan and Jacqueline Person, the couple that has redefined what California Sparkling wine can be--and having fun in the process whether through their affectionately named critter labels (Octopus, Sea Urchin, Rouge Brut), to their longer lees aged, site-specific sparkling wines from Marin and Corralitos.
Dan will be pouring 4 wines to showcase the breadth of their range and his own technical prowess from the forced carbonated "Carbonation", to a pet nat, to two very different styles of traditional method sparklers. (And if you don't know what pet nat means mean or what makes it different, even more of a reason to come and learn more!)
More about Carboniste:
Founded in 2017 years ago, CARBONISTE was born out of a desire to make uniquely Californian sparkling wine. Rather than trying to recreate Champagne in California, Dan and Jaqueline make sparkling wines that capture the fresh fruit and vibrancy unique to our sunny state.
Together, Jacqueline and Dan combine impressive winemaking and business backgrounds: Dan spent three years at Schramsberg, staged at D.R.C in 2009, and spent the past few years with Dan Petroski at Larkmead; Jacqueline has been a longtime consultant for Naked Wines.
And the press just can't get enough of these two!
”Innovative Producers are Making Sparkling Red Wines for Everyday Drinking.“
”This Rouge Brut from Napa Valley stemmed from a dinner table experiment, but the blend is no accident at all. The Merlot boasts a variety of botanicals... Albariño form[s] a fresh base of herbal elements with a plum top.“
Sonoma and Napa Wineries You Need to Know in 2025, According to Food & Wine.
”Husband-and-wife team Dan and Jacqueline Person specialize in more “unusual” sparkling wines at Carboniste, founded in 2017. Food & Wine highlighted the label’s “ruby-hued, juicy” Carboniste Rouge Brute ($32). The Brut is a blend of 70% Merlot and 30% Albariño for a rich and playful sparkler.“
