Founded in the 1970s, Domaine de Villaine is the passion project of Aubert de Villaine, who was then co-director of Domaine de la Romanee-Conti. Located in Bouzeron, the Domaine takes Aligote (famously Burgundy's other white grape, and Bouzeron's flagship variety) to dazzling new heights. True to its varietal nature, this Bouzeron is lively and chiseled wine, but it also has a finesse and roundness that springs from the essential nature of the terroir-special marl- limestone soils located on the top of the hill in Bouzeron. Additionally, Aubert's decision to use the lower yielding and more aromatic Aligote Dore clone, results in a wine with more concentration and character. Shy at first, this wine opens up beautifully with linden and white flowers, and an unmistakeable note of petrichor (the pavement after the rain). The palate seamlessly blends the richness of the fruit upfront (lemon cream), vanilla and fresh herbs on the mid palate, with a stoney, mouthwatering finish that keeps on going and going. To best appreciate the freshness and fruit, drink young (within two or three years). To allow the wine to fully develop fullness and "fatness", hold for up to ten years.
