Carboniste Crab Sparkling Orange Wine 23

Our 2023 Orange Wine is the only critter that takes an extra year to make! The extra time produces a wine that is supple, rich, and layered. Vineyards: We've grown fond of making sparkling wine with grapes from an area of California off of the central coast called San Benito county. The vineyard holds misty clouds blown off the Pacific. An extended chilly atmosphere combined with warm summer afternoons allows longer development of flavor in the grapes and we love the expression of fruit in this finished bottle. Winemaking (Traditional + Modern) To get a wine that is orange in color, we take white grapes (Pinot Grigio & Albarino) and treat them like a red wine. This wine underwent native fermentation while on skins for 7 days to extract both flavor and color. It was then pressed and barrel aged for 1 year. This aging softened tannins and developed the luxurious mouthfeel you'll love in this wine. The wine was blended with a little Rose of Pinot Noir, Chardonnay, and Albarino, was bottled, had its 2nd fermentation then was disgorged by hand. The resulting sparkler is juicy, rich and layered.
