Small-lot wild yeast fermentations in open-top stainless steel tanks. Limited pre- ferment maceration, followed by minimal, but targeted temperature and punch-down intervention.
The translucent ruby red color of this wine
belies its much deeper aroma. Sweet
graham, red plum and oiled leather
commingle on the nose along with scents of
brown spice, cola and musk. The impression
on the palate falls more to red: ripe
cranberry, sweet raspberry, and a slight
savory Asian grill (umami). The intensity is subtle and persistent, with acid well matching a fairly plush palate that keeps putting your lips back on the glass.
