"Pristine, hidden, east facing hillside, IPM managed, perfectly matured fruit which was fermented w/o the addition of yeast in an open top tank for four weeks. The must was then pressed off and the wine settled into 40% new French oak for maturation.
From the hillside site we get more intensity of the blackberry flavor and fullness of mouth with dusty tannins and an intensely blue black color. The low acid makes it early maturing and very easy to drink on its own but the structure makes it fantastic for all meat and dark dishes."
