Den is the Japanese kanji character for "rice paddy." Minimally treated, Den brings out the natural characteristics of the Calhikari rice grown in the Sacramento Valley (Rue & Foreman Ranch). The round mouth-feel comes from Oakland's soft water, and the pleasant acidity allows for creative food pairing.
This is Den’s original flagship sake. Each batch is slightly different. However, the core characteristics and ingredients remain the same (yeast, koji, rice and water). Batch #13 has an inviting aroma of orange blossom, nectarine, celery and spearmint, with a hint of underlying caramel. On the palate, it shows pleasant bitterness of dark green that brightens with an acidity-led and mouth-watering tail on the finish.
