This Pinot Noir was hand-harvested at 23.5 Brix. It was cold-soaked for 3 days until the onset of a native fermentation. The fermentation took place in open-top fermenters, and was completed by BGY, a wine yeast isolated from vineyards in Burgundy.
On the nose, this Pinot Noir is aromatic, floral, and earthy. It offers red fruit, spicy black pepper, and a touch of vanilla. The palate is rich in strawberry and sarsaparilla. This Pinot has great structure in that it is rich in tannins and has high acidity.
