Grignolino is a very old grape variety from Piedmont, grown and vinified since the Middle Ages. This grape delivers light garnet toned wines with fruity aromas, bright acidity and good tannic structure. Due to its uncompromising personality Grignolino has been referred to as the “anarchic prince of Piedmont”. Despite being very light in color, it can be paired with a wide range of dishes, thanks to its acidity and tannins.
The grapes are softly pressed and the soaking time during maceration is kept very short (4 to 6 days) in order to limit the tannins in the wine. The alcoholic fermentation takes place in stainless steel vats at a controlled temperature. The malolactic fermentation occurs spontaneously or is
induced at a controlled temperature.
Our Grignolino grapes come from our “Garbera” vineyard situated in a prominent position on the hills surrounding the village of Rocchetta Tanaro in Monferrato. During the growing phases we perform green harvests and cluster selections in order to ensure optimal ripening of the grapes.
despite being very light in color Grignolino can be paired with a wide range of dishes, thanks to its acidity and tannic structure. It is a super versatile wine that matches perfectly with BBQ, light vegetarian dishes, sushi and Asian cuisine (great with Pad Thai). When slightly chilled, it can be a perfect summer wine to sip as an aperitif.
