Beginning in the 1980s, he was among the first to vinify and bottle single parcel wines (after studying under  top up his white wines in barrel (moving away from the \"sous voile\", oxidative style that defined the region for generations) to focus on more precise terroir expression (not to worry, the domain does still produce some sous voile offerings today). He's continued to hone his craft, studying under masters like Domaine Ramonet in Burgundy, in the 90s, which led his to use old Burgundy barrels for vinification, and to move to a more natural style of winemaking (less SO2 in the cellar and organic farming) -- ideas which were still quite radical for the time, but are now the norm. A full third of the domaine's 14 hectares are over 60 years old and still worked by horse\u003cspan\u003e.
