It’s a place that is alive and meant to be shared\u003c\/em\u003e.”\u003c\/p\u003e\n\u003cp\u003eGuillaume and Karina Lefèvre founded Domaine de Sulauze in 2004. Brazilian born Karina traveled to France and met Guillaume, of Marseille, while hiking in Corsica. Together, along with a government farm subsidies program, they purchased Domaine de Sulauze, a mixed-use farm spanning 100 hectares just outside the town of Miramas, in Provence. Under the Lefèvres the land was converted to organic then biodynamic farming. Here they grow 2 hectares of wheat for bread, 2 hectares of barley and hops for beer and 5 hectares of olive trees. They also have a large vegetable garden and free roaming Camargue horses, cows, and sheep.\u003c\/p\u003e\n\u003cp\u003e30 hectares are planted to vineyards with the majority on limestone, unique to the region. On this flaky limestone “lauze” soil, with shells and sand, they grow classic Provence varieties: Mourvèdre, Grenache, Syrah, Cinsault, Vermentino, Grenache Blanc, Clairette, and Ugni Blanc. These rarer limestone soils lend complexity and finesse to the wines as well as to the name “Sulauze”, meaning on lauze.\u003c\/p\u003e\n\u003cp\u003eIn addition, the domaine is of historic importance and has a medieval stone chapel in the middle of the vineyard. The parcel behind the chapel produces “Chapelle Laique” blanc and rouge. The grapes are harvested by hand, fermented with native yeasts, and never filtered; whether a small amount of sulfur is added at bottling depends on the vintage and cuvée.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cstrong\u003eVineyards \u0026amp; Site: This fruit is grown on employee-owned vineyards in an adjacent valley in St Martigues that they farm organically. \u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eVinification \u0026amp; Aging: Direct press rosé, fermented with native yeast in a temperature-controlled tank.
