We as humans crave change. We get bored with things that do not continue to impress. The latest movie, the cool neighborhood restaurant, the trendy electric car, all of these things are all attractive for one reason…they are new to us. The same can be said with the interesting and esoteric wines that are populating our shelves these days. Wines like skin-fermented Semillon and carbonic-macerated Mission, to list just a few, are increasingly more sought after and coveted. These new kids on the block are fun, refreshing and intriguing new conversation pieces at our dinner parties. They eschew the winemaking techniques of the older generations, making way for new flavors and new discoveries.
